Eton Mess with New Forest Strawberries

Ingredients
500g New Forest Strawberries (code:47857)
400ml Double Cream (code:26227)
50g Ready-Made Crushed Meringue (code:9916)
Sprigs of fresh mint, to garnish (code: 6387)
Method
- Purée half the strawberries in a blender. Chop the remaining strawberries, reserving four for decoration.
- Whip the double cream until stiff peaks form, then fold in the strawberry purée, crushed meringue and chopped strawberries.
- Spoon equal amounts of the mixture into four cold serving glasses. Serve garnished with the remaining strawberries and a sprig of mint.
